Quick Pickled Cucumber (No Jar)


Just a quick post today. Try this recipe and be amazed!

You can actually pickle ANY vegetable, but I have some Cucumbers....so let's Pickle!


DESCRIPTION


Quick and easy pickled cucumbers with onion made and rested in the fridge.


INGREDIENTS

  1. 1 cup water
  2. 1/3 cup vinegar (Your Choice, I add a dash of Apple Cider Vinegar)
  3. 2 tablespoons sugar (optional)
  4. 1 to 2 teaspoons salt
  5. sliced garden cucumbers (about 2 cups)
  6. sliced onion or green onion (about 1/2 cup)
  7. additional vegetables as you like (what about Chilli for some extra "skop")




Instructions:

In a small bowl add the water, vinegar, sugar, and salt. Stir to combine and until the sugar and salt have dissolved. Add the cucumber and onion. Taste and adjust the ingredients to your liking.

All the cucumbers should be covered in the brine, if you have lots of cucumber or are making a big batch, make more brine.

Let the mixture rest in the fridge until you are ready to eat. The flavors develop over time, keep them overnight.

TIP: YOU CAN SAVE THE BRINE FOR YOUR NEXT BATCH
